Morning Muffins
Rise and shine with these fruity Midsummer muffins.
Ingredients
- 2 1/4 cup flour
- 1 1/4 cup sugar
- 3 eggs
- 3/4 cup applesauce
- 1/2 cup vegetable oil
- 2 cups carrots, grated
- 1 tart apple, grated
- 8oz can crushed pineapple, drained
- 1/2 cup raisins
- 1/2 cup walnuts, chopped
- 1/2 cup coconut, flaked
- 3 tsp cinnamon
- 1 tsp vanilla
- 2 tsp baking soda
- 1/2 tsp salt
Preparation
Mix together the flour, sugar, cinnamon, baking soda and salt. In another bowl, mix the eggs, apple sauce, vegetable oil and vanilla. In yet another bowl, combine the carrots, apple, pineapple, raisins, nuts and coconut.
Add the egg mixture to the flour mixture and blend until just moistened. Add in the fruit mix, again just mixing until blended. Don't mix too much! Pour into muffin cups and bake for 20-25 minutes at 350F.
